四川“打盆人”38年头顶30万碗菜从未失手

编者按:陈长发是四川合江县先滩镇的一个传奇。38年来,他脚穿草鞋、头裹白布、手持一块方巾,头顶数米长的木制食槽送菜超30万碗,却从未失手一次。顶着几十斤重的滚烫菜肴,在乡宴的席间穿梭自如,送菜如同杂耍,这项绝活就是“打盆”。“打盆”是先滩镇所独有的,据考证起源于清代中期,当时古镇上办宴席,客人多菜品也多,上菜的人自然就得动作快。可老街狭长且窄,上菜的人多了,行走起来不方便,于是想出了打盆这一上菜方法。如今在镇上打盆的只有陈长发和杨光祥师徒二人了。

Editor's note: Chen Changfa is famous for serving dishes in Hejiang County of western China's Sichuan Province. And, one of his claims to fame is that he can hold a long wooden tray on top of his head packed with a large number of dishes. He believes he has brought more than 300,000 dishes to dining tables over a period of 38 years without a single mishap. The trick is said to have been invented several hundred years ago in the town, when dish servers needed to scamper through crowded streets showing a great sense of balance to serve many guests at the local banquets. Now, only Chen and a single apprentice can perform the extraordinary feat.
