Editor's note: Black rice is also called black sticky rice, and it can have either a sweet or salty flavor. To make such foods, the leaves of a kind of wild shrub called black rice bush, aka Vaccinium bracteatum, is used to marinate glutinous rice and color it before the rice is presented and steamed in baskets over a fire.

This photo shows a staff member at a restaurant in the city of Lin'an, Zhejiang Province, making black rice foods as summer nears. As a local saying goes, after eating black rice, you will not suffer from heatstroke in summer and can avoid attacks from mosquitoes and other bugs. [Photos by Hu Jianhuan / China.org.cn]
