Chaogan is a famous local snack in Beijing. But unlike its name suggests, the food is stewed, not stir-fried; and made of not only pork liver, but also pork intestines. It first appeared during the Song Dynasty as stewed pork liver or stir-fried pork lung and was reinvented during the Qing Dynasty. The local custom suggests that chaogan is not eaten with chopsticks or spoons, but sipped from the bowl while turning it around. However, people pay little attention to this tradition nowadays. Tian Xing Ju and Yao's restaurants serve the best chaogan in Beijing.
