Jiaoquan is a Chinese version of doughnut made of wheaten flour. It is a household snack in Beijing, usually eaten with baked cake or douzhi (fermented mung bean juice). In Beijing, there used to be a Jiaoquan King, a former cook at the Nanlaishun Restaurant. With his incredible culinary skills, he could make each jiaoquan almost identical in shape and appearance. His jiaoquan was tasty and crispy.
