Guopu is said to have been the royal light refreshment of the Ming Dynasty (1368 to 1644 AD). It used to be processed with honey, which has now been replaced by sugar. There are a variety of preserved fruits in Beijing, like preserved apple, pear, apricot, peach, green plum and haw. They are processed and boiled in sugar water before being dried. They look bright-brown, golden or amber, though dry and slightly sticky with below 20 percent moisture to them. Guopu is nutritious and rich in minerals and vitamin C.
