Look closely at the daily work routine of the 35-year-old Jiang Wenliang, and you will find that he is no ordinary chef. Waltzing between several woks, he delivers a performance and dishes that satisfy even the pickiest of customers.
Many may love his version of scrambled eggs with tomatoes, something which he considers his house specialty. But what he is most famous for is his delicate knife work, as he slices vegetables into the thinnest pieces. In a local TV talent show, Jiang won over judges and viewers with his thinnest tomato slice, which was threaded though a needle's eye.
A video of his skills went viral on the Internet, and Jiang became known as the "coolest train chef in history."
But Jiang's fame and popularity did not come easily. Ten years ago, he came across a job ad from the train station, which was searching for top notch chefs for its star-level train. It was during a period of rapid railway expansion in China. So Jiang gave it a shot and went from a five star hotel to the train station. But his starting days at the train service were disheartening.
Jiang went back to work and continuously perfected his slicing techniques in a moving environment. Over time, he became a star chef. But he was not content with the status quo.Taking cue from his friend, Jiang decided to learn from his fellow workers to improve his culinary skills and cater to a wider variety of tastes. And he once rejected the idea of railway management raising food prices on the train.
Jiang said he enjoys the fulfillment of a job that puts food on the table and gains approval from his customers.
