Turning study of steamed buns into science |
St Cavish's methods have caused some confusion in the restaurants he visited.
He recalls one owner's response when he was cutting his fifth steam stuffed bun.
"She came to me and asked "What are you doing? You don't know how to eat this? You can't do that." She was really unhappy," he said.
Working on the data is one thing, to eat all the research subjects is another. St. Cavish says he ate almost 8 kilograms of xiaolong bao, and came to the conclusion that the study is just for fun.
St. Cavish has named Chinese cuisine as his biggest interest. He says he will continue to record, study and translate to introduce more of this food culture to the west.
