Bianyifang roast duck
Bianyifang is the oldest duck restaurant still standing in Beijing. The restaurant was established in 1416, and a dispute among its owners in 1855 resulted in the branch that survives until today.
The new branch has since become one of the two most famous Peking duck specialty restaurants in the country, along with Quanjude. The restaurant has carried the tradition of Beijing cuisine from the Qing Dynasty, through numerous wars to the present day.
Bianyifang doesn't bake the ducks in an open fire. Instead, they slowly stew the ducks with soup inside each duck to accentuate the flavor.
